How it works
/hud is a Bedrock command. It was added in 1.20.60 behind the Upcoming Creator Features toggle and works without it from 1.20.80. Each command hides or resets one part of the screen for the players you pick:
hud @a hide hotbar hud @a hide health hud @a reset all
The parts are paperdoll, armor, tooltips, touch_controls, crosshair, hotbar, health, progress_bar, hunger, air_bubbles, horse_health, status_effects, item_text and all. reset brings a part back.
When you show some parts and hide others, the generator puts the reset lines first, so “show everything, then hide the hotbar” ends with only the hotbar hidden. Java Edition has no /hud; F1 hides the HUD there, for yourself only.
FAQ
How do I hide the whole HUD in Minecraft Bedrock?
Run hud @s hide all (or @a for everyone). Bring it back with hud @s reset all.
Is there a /hud command on Java Edition?
No. Java has no command to hide another player's HUD. Each player can press F1 to hide their own.
Why does /hud say it is an unknown command?
Your world is older than Bedrock 1.20.80. In 1.20.60 and 1.20.70 it needs the Upcoming Creator Features experiment; before 1.20.60 it does not exist.
Can I hide only the hearts and keep the hotbar?
Yes. Each part is its own command: hud @a hide health hides the hearts and leaves everything else alone.
